Cooking with Milk?

Postby MelanieW » Tue Apr 20, 2010 5:57 pm

I know we are supposed to avoid milk during c.diff but what about cooking with it? I love noodles and chicken in a white sauce but the sauce requires milk. Opinions?

I ate cream soups when I was on my 2 months of vanco for c diff and it didn't bother me at all. Guess I got lucky huh??
It was campbells soup and I made it with half water and half milk.
Maybe if you made the white sauce with skim milk ?? Just a thought.

This is an interesting question and one I wondered about too. My daughter is lactose intolerant and can't drink milk and even when she eats yogurt has to take a Lactaid pill with it. However, she has never had a problem with milk that has been cooked - the soups are fine and even pizza with the melted cheese is fine. I wonder if boiling the milk or bringing it up to a certain temperature during cooking makes the difference. I am about to try it out too.
