Cultured Buttermilk

Postby Bry » Fri Jan 23, 2009 10:10 pm

Has anybody tried drinking lots of cultured buttermilk?

It's made with Lactococcus lactis subsp. lactis (formerly Streptococcus lactis) which makes nisin. The nisin prevents buttermilk spoilage. It also kills C.Diff.

Cultured buttermilk also includes L. lactis subsp. cremoris which doesn't make nisin but might help L. subsp. lactis withstand low ph.

I read in a 1900s book if you consume nothing but buttermilk and water with a little fiber for a day or two, your feces turn white.
