Leave out the post infectious part and you can get IBS anytime, not just after another illness!
For most people who relapsed an FMT cures them but it's not instant.
It takes a long time for the flora to go back to a new normal, (maybe up to 2 years) and theres bound to be off days.

Thanks. I had a ribeye steak. It did not agree with me. I guess it is trial and error on adding back new foods. I am 3 months post fmt and so frustrated of not knowing which foods I can handle.

Some people can't handle red meat. I could, but the fattier cuts like rib eye are not as easy as leaner cuts. I prefer NY or filet mignon. Those have less fat.

I have not been able to eat any red meat since CDIFF in 2014-2015. I have tried 4 times and each time I get sick for 2-3 days. I have given up but plan to try again in the future. Each time I have tried a very small amount.
My gut can not handle it and it is also very hard to digest.

You may want to start small once feeling better, I tend to go Bland when that happens and generally improve in a few days

T & A - trial and error - and remembering we are all different.

Usually, the most common offenders are dairy products and excessive sugars.

Best of luck.
