Fermentation

Since I tend to want to rely on the natural healing properties of the body in any medical situation, I've been reading about fermentation and have found some interesting and practical ideas. I like fermented foods anyway, and also like do-it-yourself approaches, so I will probably try making a few of these products. I used to make my own yogurt BJ (before job) and should probably start to do that again, especially since I'll be eating the stuff in volume for awhile. Some of the other "exotic" (to me) fermented foods I'll probably buy first in small quantities, then try to make them at home if it seems feasible and I like the taste. I'm also on low salt, so some of them will be a problem, but I did find some recipes for low salt fermented foods, and there is a cookbook available that has 2-3 recipes for low salt sauerkraut. Worth a try, I think. Here's the links, and I'll make additions as I find them.
