Toria, I want to emphasize over cooking sauerkraut could destroy the good bacteria if you bring it to a boil. Slight warming is all that is needed. Traditionally prepared sauerkraut found in health food stoes will provide probiotic benefits. Typical commercial sauerkraut is usually pasteurized, a process that kills all its "friendly" bacteria. Making traditional (unpasterurized) sauerkraut and pickles (another one the is rich in probiotics) at home is an easy process. We have a Sauerkraut Crock that was handed down from my husbands' parents and use it all the time. You can buy them on the internet as well. Take care!!!!
